Glory Bowls

Sadly I can not claim the brilliance behind this recipe-but it is a favorite at the Crazy Mare Ranch.  I hope you enjoy the recipe as much as we do.

Ingredients

8 cups cooked Brown Rice
2 cups beets, grated or juilenned
2 cups carrots, grated
2 cups spinach leaves
2 cups cucumber
2 cups peppers julenned
3-4 cups shredded meat of choice sauteed in a simple sauce of your choice of Teriyaki (can be substituted for tofu)
1 cup of the following, almonds toasted, sun flower seeds or pumpkin seeds 

 

 

Dressing

1/2 cup nutritional Yeast Flakes
1/3cup water
1/3 cup tamari, soy sauce or Bragg seasoning(we use Bragg)
1/3 Apple cider vinegar
2 cloves garlic, crushed
1 1/2 cups of olive oil or oil of choice
2 Tbsp tahini paste(optional

 

Method of Preparation
Prepare your brown rice and set aside.  In a skillet saute your protein of choice.  Prepare dressing in a blender, you will have left over dressing.  To prepare bowls place brown rice on bottom and top with vegetables and top with nuts or seeds if you choose.  Drizzle the dressing on the bowls and serve.  Enjoy
